Ingredients:
4 chicken breast fillets
1 cup Latino BBQ sauce (e.g. Tres Chiles BBQ Sauce by Rufus Teague )
2 garlic cloves, chopped
1 teaspoon ground cumin
1 teaspoon paprika powder
salt and pepper to taste
Fresh coriander for garnish (optional)

Recipe for vegan BBQ Jackfruit Tacos
Ingredients:
2 cans of young green jackfruit in salt water or water (approx. 560 g drained weight per can)
1 onion, chopped
2 garlic cloves, chopped
1 cup Latino BBQ sauce (e.g. Diablo Limonajo BBQ Sauce by Rufus Teague )
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon paprika powder
salt and pepper to taste
corn or wheat tortillas
Fresh coriander for garnish (optional)
Avocado, sliced (optional)
Fresh lime juice (optional)
Directions:

Drain the jackfruit from the cans and remove the hard seeds. Use your hands or a fork to break the jackfruit into fibers.

In a pan, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes.

Add the chopped garlic and cook for another minute until fragrant.

Add the chopped jackfruit to the pan and stir well to combine with the onions and garlic. Add the ground cumin and paprika and continue cooking until the jackfruit is lightly browned, about 5-7 minutes.

Reduce the heat and simmer the jackfruit for another 10-15 minutes to allow it to absorb the flavor of the barbecue sauce and become tender. Stir occasionally.
