
What are Vidalia onions? We hear this question quite often at American Heritage, as one of our most popular Stonewall Kitchen sauces is called Vidalia Onion Fig Sauce. Since I saw it in the supermarket today, I wanted to introduce it on our blog. The Vidalia onion is a mild vegetable onion that is the size of an apple.
Its name is protected, as the small R symbol shows. It has been grown in Georgia since 1930, where the mild winters are the right thing for this type of onion. It is harvested from April to June and is therefore only available in spring and summer. It is considered America's favorite onion and if we had refrigerated containers for transport, I would have imported a few of them to Germany.
