
What are Vidalia onions? We hear this question quite often at American Heritage, as one of our most popular Stonewall Kitchen sauces is called Vidalia Onion Fig Sauce . Since I saw it in the supermarket today, I wanted to feature it on our blog. The Vidalia onion is a mild vegetable onion about the size of an apple.
Its name is protected, as indicated by the small R symbol. It has been cultivated in Georgia since 1930, where the mild winters are necessary for this type of onion. It is harvested from April to June and is therefore only available in spring and summer. It is considered America's favorite onion, and if we had refrigerated containers for transport, I would have imported a few to Germany.
