When the site was no longer used for agriculture after the end of the American Civil War, an astonishingly high number of maple trees grew there. In 2007, former banker and founder of Crown Maple Robb Turner bought the area for himself and his wife for vacation purposes. Neighbors then told him that there were probably over 20,000 maple trees on the site, which immediately motivated Turner to start producing maple syrup . The first batch was produced in 2011 - today the maple syrup from Madava Farms is considered to be probably the highest quality in the world.
A special, patented production technique is used to produce Crown Maple maple syrup : the reverse osmosis process. This removes around 80% of the water content from the maple sap and filters out impurities. Whether maple syrup is light or dark in color depends on when it is harvested: the later it is harvested, the darker the syrup that is produced after the maple sap has been boiled. Each flavor of Crown Maple has its own characteristic note and is so convincing that the products are now used in numerous New York Michelin-starred restaurants.
