Crown Maple: Amber Color Maple Syrup
Madava Farms is a 300-hectare site in the picturesque Hudson Valley of New York State, where Crown Maple produces its incomparably delicious maple syrup . After farming came to a standstill on the former farmland after the American Civil War, an astonishing number of maple trees grew on the site. Robb Turner, founder of Crown Maple, bought the land in 2007 for himself and his wife as a vacation spot and was amazed when neighbors told him that the area contained around 20,000 maple trees. The former banker decided on the spur of the moment to get into maple syrup production – thanks to his intensive study of the subject, the syrup first produced by Crown Maple in 2011 is now considered to be the highest quality maple syrup in the world .
Crown Maple produces its syrup using the patented reverse osmosis process – a special production technique in which approximately 80% of the water content is removed from maple sap and impurities are filtered out. Depending on the time of harvest, maple syrup takes on a vibrant, light golden to rich, dark brown color. Crown Maple syrup is available in Amber, Dark, and Very Dark flavors, as well as in variations with vanilla, cinnamon, applewood smoke, and Bourbon Barrel Aged (limited edition). Each flavor has its own distinctive note. Crown Maple products are now used in numerous New York Michelin-starred restaurants to enhance dishes and desserts.
With its intense aroma and robust flavor, the Amber Color variant is reminiscent of gingerbread, roasted chestnuts, and toffee, refined with a hint of cloves and nutmeg. The syrup leaves a lingering aroma of caramel , roasted nuts, and a delicate buttery flavor in the mouth. This maple syrup is ideal for enhancing teas and freshly roasted coffee, glazing meat, chicken, and fish, for marinades and sauces, for baking moist muffins or cakes, and for use in cocktails with strong spirits.
